Instructions
Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned. Drain off any excess fat to keep it from being greasy.
Stir in taco seasoning, Ro-Tel tomatoes, black beans, corn, garlic powder, and cumin. Let it simmer for 5 minutes so the flavors meld together.
In a bowl, prepare the cornbread mix as directed on the package using the egg and milk. Stir in half of the shredded cheddar cheese for a gooey, cheesy cornbread topping.
Pour the beef mixture evenly into the prepared baking dish. Then, gently pour the cornbread mixture over the top, spreading it out evenly with a spatula.
Place the dish in the oven and bake for 20–25 minutes, or until the cornbread is golden and a toothpick inserted in the center comes out clean.
Remove from the oven and let it rest for a few minutes. Sprinkle the remaining cheddar cheese on top and let it melt. Add a dollop of sour cream or sliced green onions before serving.
