Ingredients
-
2 pounds of beef ribs (short ribs or back ribs work great)
-
1 cup barbecue sauce (homemade or store-bought)
-
4 cloves garlic, minced
-
1 tablespoon brown sugar
-
1 tablespoon apple cider vinegar
-
Salt and pepper, to taste
Instructions
Rinse the beef ribs under cold water and pat them dry with paper towels. Trim excess fat if necessary.
In a small bowl, combine the minced garlic, brown sugar, salt, and pepper. Rub the mixture generously over both sides of the ribs.
Mix the barbecue sauce with apple cider vinegar in a separate bowl and stir until smooth.
Place the ribs in the crockpot. If needed, cut them into manageable pieces so they fit comfortably. Pour the sauce mixture over the ribs to coat them evenly.
Set your crockpot to low and cook for 8–9 hours, or until the beef is tender and pulls away from the bone easily.
Notes
Beef ribs are larger and take slightly longer to cook than pork ribs. Make sure to check for tenderness before serving. Basting occasionally with sauce enhances flavor but is optional.
