    • 1/4 cup whole milk

    • Salt and pepper, to taste

    • 8 breakfast sausage links (turkey, or plant-based)

    • 1 cup shredded sharp cheddar cheese

    • 8 small flour tortillas


Instructions

Step 1: Preheat the Oven
Set your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing it.

Step 2: Whisk the Eggs
In a large mixing bowl, crack the eggs and add the whole milk. Season with salt and pepper to taste. Whisk until well combined and slightly frothy—this will make the eggs fluffy when cooked.

Step 3: Cook the Sausage
In a non-stick skillet over medium heat, cook the sausage links for about 8–10 minutes, turning occasionally, until browned and fully cooked through. Transfer to a plate and set aside.

Step 4: Scramble the Eggs
Using the same skillet, reduce the heat slightly and pour in the egg mixture. Cook the eggs slowly, stirring frequently, until softly scrambled and fully cooked through. Remove from heat and set aside.

Step 5: Assemble the Roll-Ups
Lay out the flour tortillas on a clean surface. Distribute the scrambled eggs evenly across the center of each tortilla. Place one sausage link on top of the eggs, then sprinkle each with a generous amount of shredded cheddar cheese.

Step 6: Roll and Bake
Roll up each tortilla tightly, folding in the sides as you go to prevent the filling from spilling out. Place each roll-up seam-side down on the prepared baking sheet. Bake in the preheated oven for 10–12 minutes, or until the tortillas are slightly crispy and the cheese is melted.

Step 7: Serve and Enjoy
Remove from the oven and let cool for a few minutes before serving. These roll-ups are best enjoyed warm, but they’re also great for reheating later!

Notes

Be careful not to overcook the scrambled eggs—they should be soft and moist so they don’t dry out during the baking process. If you plan to freeze or refrigerate these for later, undercook the eggs slightly so they stay fluffy when reheated. When baking, placing the roll-ups seam-side down keeps them from unrolling in the oven.
