Ingredients
-
12 ounces rotini pasta
-
1 cup chopped cooked chicken or turkey
-
1/2 cup chopped cooked bacon
-
1/2 cup chopped ham
-
1 cup chopped celery
-
1 cup chopped red onion
-
1 cup cherry tomatoes, chopped
-
1/2 cup fresh parsley, chopped
-
1 cup shredded cheddar cheese
-
1/2 cup mayonnaise
-
1/4 cup ranch dressing
-
1 tablespoon Dijon mustard
-
Salt and pepper, to taste
Instructions
Boil a pot of salted water and cook the rotini pasta until al dente, according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.
While the pasta cools, chop the chicken or turkey, bacon, and ham into bite-sized pieces. Dice the celery, red onion, and cherry tomatoes. Chop the parsley and shred the cheese if needed.
In a large bowl, whisk together the mayonnaise, ranch dressing, and Dijon mustard. Season with salt and pepper to taste, mixing until smooth.
Add the cooled pasta, chopped meats, vegetables, parsley, and cheese to the dressing bowl. Gently toss until everything is evenly coated.
Cover the salad with plastic wrap and refrigerate for at least 1 hour. Toss again before serving and garnish with extra parsley or shredded cheese if desired.
Notes
Make sure all ingredients have cooled before combining to maintain the salad’s texture and prevent melting the cheese or softening the vegetables.
